    Pumpkin Rum Pound Cake

    • 1 cup butter, softened
    • 3 cups granulated sugar
    • 5 eggs
    • 3 cups all-purpose flour
    • 2 tsps baking powder
    • 1/2 tsp baking soda
    • 1/2 tsp salt
    • 2 cups pumpkin puree
    • 2 tsps ground cinnamon
    • 1/3 cup rum
    • 1/4 tsp ground cloves
    • 1/8 tsp ground nutmeg


    Instructions


    1. Preheat oven to 325 degrees. Grease and flour a bundt pan.
    2. Beat butter; add sugar and beat until very smooth (1 to 2 minutes); beat in eggs one at a time.
    3. Combine dry ingredients and spices in a separate bowl. In a third bowl, combine pumpkin and rum.
    4. Alternate mixing flour mixture and pumpkin mixture into butter mixture. Pour into pan.
    5. Bake for 85 to 90 minutes.
