    Southwestern Pumpkin Cake


    List of Ingredients


    • 4 large eggs
    • 2 cups granulated sugar
    • 16 oz can pumpkin puree
    • 1 1/4 cups vegetable oil
    • 1/4 cup pecans, chopped
    • 3 cups all-purpose flour
    • 2 tsp baking powder
    • 2 tsp baking soda
    • 1 tsp salt
    • 1 tsp ground cinnamon
    • 1/2 tsp ground nutmeg
    • 1/2 tsp ground allspice
    • 1/2 tsp ground cardamon
    • 16 oz fresh whipping cream, whipped


    Instructions


    1. Preheat oven to 325 degrees and grease 10" tube or bundt pan; set aside.
    2. Beat eggs until frothy in large mixing bowl. Add sugar, pumpkin puree, vegetable oil and chopped pecans; stir well to blend.
    3. Sift together flour, baking powder, baking soda, salt, cinnamon, nutmeg, allspice and cardamon and blend dry ingredients with wet; by hand or the low setting of electric mixer.
    4. Pour batter into prepared pan and bake until cake tester can be cleanly removed from the center of the cake, about 45 to 60 minutes.
    5. Serve each slice with generous dollop of freshly whipped cream.
