    Recipe Introduction


    Yield: 2 1/2 dozen


    List of Ingredients


    • Vegetable cooking spray
    • 1 1/2 cups sugar
    • 3/4 cup firmly packed brown sugar
    • 1/4 cup plus 2 T butter
    • 1/2 cup milk
    • 1 1/2 cups chopped pecans


    Instructions


    1. Lightly coat wax paper with vegetable cooking spary; set aside. Combine sugars, butter, milk, and chopped pecans in a heavy 3 quart saucepan. Bring to a boil over medium heat, stirring constantly. Boil, uncovered, stirring constantly, 1 to 2 minutes or until a candy thermometer reaches 220 degrees. (You may need to lower the heat with a thiner saucepan, and rely on the candy thermometer instead of the timer.)
    2. Remove saucepan from heat, and beat praline mixture with a wooden spoon 4 to 6 minutes or just until mixture begins to thicken. Working rapidly, drop by tablespoonfuls onto prepared wax paper; let stand until firm.
    3. Orange Pralines: Add 3 T Cointreau or other orange-flavored liqueur before cooking.
    4. Cafe au Lait Pralines: Add 1 1/2 T instant coffee granules before cooking.
    5. Mocha Pralines: Add 1 1/2 to 2 T instant coffee granules and 1/2 cup semisweet chocolate morsels before cooking.
    6. Chocolate-Peanut Butter Pralines: Add 1/2 cup semisweet chocolate morsels and 1/4 cup creamy peanut butter before cooking.
    7. Peanut Butter Pralines: Add 2 T creamy peanut butter before cooking and 1 tsp vanilla extract to cooked mixture before beating.
    8. Chocolate-Mint Pralines: Add 5 (1/2 oz) chcoolate-covered peppermint patties before cooking.
    9. Hot Spicy Pralines: Add 1/2 tsp ground red pepper before cooking.
    10. Bourbon Pralines: Add 3 T bourbon before cooking.
    11. Chocolate Pralines: Add 2 (1 oz) squares unsweetened chocolate before cooking.
    12. Vanilla Pralines: Stir 1 tsp vanilla extract into cooked mixture before beating.


    Final Comments


    *If your pralines don't harden as they should, just scrape the gooey mess off the wax paper and fold it into softened vanilla ice cream for Praline Ice Cream. Or you can scrape the soft mixture up, chill, and roll it into 1" balls. Dip them into melted chocolate to make Praline-Chocolate Truffles.

    *If the candy mixture hardens to the pot before you can spoon it into pralines, break it into pieces and fold it into softened vanilla ice cream, and you have Praline Crunch Ice Cream, or sprinkle the crumbled mixture over a commercial cheesecake and serve Praline Cheesecake.
