    List of Ingredients


    • 3 T butter
    • 2 cups light cream
    • 3 T grated onion
    • 2 pkgs frozen chopped spinach, thawed and drained
    • 1 lb chopped mushrooms
    • 3 T grated Gruyere or Swiss cheese
    • 3 T flour
    • 2 tsp salt
    • 1/4 tsp nutmeg
    • 1/4 tsp white pepper


    Instructions


    1. Preheat oven to 325 degrees.
    2. Saute onions and mushrooms in butter for 5 minutes. Blend in flour, salt, pepper and nutmeg. Gradually add cream, stirring to boiling point. Taste for seasoning.
    3. In buttered casserole, spread half the spinach; cover with half of the mushroom sauce, then repeat. Sprinkle with the grated cheese. Set in pan of hot water.
    4. Bake 40 minutes.
