    Chicken & Wild Rice Casserole


    List of Ingredients


    • 1/4 cup unsalted butter
    • 1/2 cup chopped onion
    • 1/4 cup all-purpose flour
    • 1 1/2 cups chicken stock
    • 1 1/2 cups 1/2 & 1/2
    • 1 tsp salt
    • 1/2 tsp fresh ground black pepper
    • 1/8 tsp grated nutmeg
    • 1/4 cup dried mushrooms
    • 3 cups diced, cooked chicken
    • 3 cups cooked wild rice
    • 1 cup grated muenster or monterey jack cheese


    Instructions


    1. Preheat oven to 350 degrees.
    2. Heat butter in large skillet over medium heat. Add onion and saute it until translucent, 5 to 7 minutes. Sprinkle on flour and stir to blend it in. Pour in stock and 1/2 & 1/2, and bring just to a simmer, whisking frequently. Simmer gently for 5 minutes, whisking often, then add salt, pepper and nutmeg. Stir in dried mushrooms, chicken and parsley.
    3. Lightly oil, or spray with cooking spray, a 2 quart casserole dish. Spread wild rice in bottom of casserole. Spoon in chicken mixture, then sprinkle cheese over top.
    4. Bake for 30 minutes, or until hot and bubbling. Serve hot.
