    Chili Beans with Cornmeal Dumplings


    List of Ingredients


    • 6 slices bacon, cut up
    • 1 medium onion, chopped
    • 1 medium stalk celery, sliced
    • 2 cans (15 oz) chili beans
    • 3/4 cup buttermilk baking mix
    • 1/3 cup cornmeal
    • 1/2 cup shredded cheddar cheese
    • 1/3 cup milk


    Instructions


    1. Fry bacon in a saucepan until crisp; remove and drain on paper towel. Drain fat, reserving 2 T in pan. Cook and stir onion and celery in pan until onion is tender. Stir in beans and reserved bacon. Heat to boiling.
    2. Mix remaining ingredients until soft dough forms; beat 20 strokes. Drop dough by 4 spoonfuls onto boiling bean mixture; reduce heat. Simmer uncovered 10 minutes; cover and simmer 10 minutes longer.
