Spinach & Rice Casserole

List of Ingredients
- 1/2 cup rice, raw
- 1/2 lb butter
- 1/3 cup flour
- 1 quart milk
- 3 eggs
- 2 lbs spinach, cooked and chopped
- 1/4 cup green onions, chopped
- 1 1/2 cups feta cheese, crumbled
- 1/4 cup parmesan cheese
- 1 T paprika
- salt to taste
- pepper to taste
- white pepper to taste
Instructions
- Cook rice according to directions, set aside.
- Melt the butter. Add flour and stir until thoroughly mixed. Cook about two minutes, then allow to cool slightly. Add mixture to simmering milk a small amount at a time. Whip to break up all the lumps then whip in the eggs until creamy and smooth. Let simmer about 10 to 15 minutes.
- Place spinach in bottom of 9" x 13" casserole dish. Add rice, feta cheese and green onions spreading equally over spinach. Salt and pepper to taste. Pour cream sauce over top.
- Sprinkle with parmesan cheese and paprika.
- Bake at 350 degrees for 20-25 minutes.
