    List of Ingredients


    • 1/4 cup butter
    • 1/4 cup flour
    • 4 cups milk
    • 1/2 lb sharp Cheddar cheese, shredded
    • 1/8 tsp ground nutmeg
    • 1/8 tsp cayenne pepper
    • salt and black pepper, to taste
    • 1 1/2 cups heavy cream
    • 1 T vegetable oil
    • 1 medium size onion, finely chopped
    • 1/2 lb fresh mushrooms, finely chopped
    • 3/4 lb cooked turkey ham, cut into small cubes
    • 1 lb egg noodles, cooked according to package directions and drained
    • 1/2 cup freshly grated Parmesan cheese


    Instructions


    1. Preheat the oven to 350 degrees. Butter a 3 quart casserole and set aside.
    2. In a large heavy saucepan, melt 3 T of the butter over moderate heat, add the flour, and whisk until well blended and smooth. Whisking rapidly, add the milk till well blended, then add the Cheddar, nutmeg, cayenne, season with salt and pepper, and stir until cheese melts. Stir in the cream, bring to a boil, stirring, and remove from the heat.
    3. In a large, deep skillet heat the remaining 1 T butter and the oil together over moderate heat, add the onion and mushrooms, and stir until softened, about 5 minutes. Add the turkey ham and stir well. Add the cheese sauce, stir to combine, then add the noodles and stir till well blended.
    4. Scrape the mixture into the prepared casserole, sprinkle the Parmesan evenly over the top, and bake till golden brown, about 30 minutes.
