    Mini Blueberry Lemon Cheesecakes

    List of Ingredients


    • 24 vanilla wafers, ground
    • 3 T melted butter
    • 3 T sugar
    • 1 cup blueberries
    • 2 (8 oz each) whipped cream cheese, softened
    • 1/4 cup sugar
    • 1/2 cup prepared lemon curd
    • 2 eggs
    • whipped topping, blueberries and lemon slices, for garnish


    Instructions


    1. Preheat oven to 325 degrees.
    2. In bowl, combine ground vanilla wafers and 3 T each melted butter and sugar. Divide mixture evenly among 12 paper-lined muffin cups; press to form crusts.
    3. In bowl of food processor, puree blueberries 1 minute. Spoon 1/2 tsp puree into each crust.
    4. In bowl of electric mixer, beat whipped cream cheese and 1/4 cup sugar 2 minutes. Beat in curd. Add eggs, 1 at a time, beating after each.
    5. Divide mixture evenly among muffin cups. Top with remaining blueberry puree; swirl.
    6. Bake 20 minutes, or until almost set in center. Cool completely.
    7. Garnish with whipped topping, blueberries, and lemon slices, if desired.
