    Mini Cookies and Cream Cheesecakes

    List of Ingredients


    • 10 chocolate sandiwch cookies, ground
    • 2 T sugar
    • 2 T melted butter
    • 2 containers (8 oz each) whipped cream cheese
    • 1/3 cup sugar
    • 2 eggs
    • 8 chocolate sandwich cookies, chopped
    • 1 tsp vanilla extract
    • whipped topping and cookie halves for garnish


    Instructions


    1. Preheat oven to 325 degrees.
    2. In bowl, combine 10 chocolate sandwich cookies, ground and 2 T each sugar and melted butter.
    3. Divide mixture evenly among 12 paper-lined muffin cups; press to form crusts. In bowl of electric mixer, beat 2 containers whipped cream cheese and 1/3 cup sugar 2 minutes. Add 2 eggs, 1 at a time, beating after each. Stir in 8 chocolate sandwich cookies, chopped, and vanilla.
    4. Divide cream cheese mixture evenly among prepared muffin cups. Bake 20 minutes or until center is almost set. Cool completely. Garnish with whipped topping and cookie halves, if desired.
