    • Crust:
    • 2 cups vanilla wafer crumbs
    • 6 T unsalted butter, melted
    • Filling:
    • 14 oz bag caramels
    • 5 oz can evaporated milk
    • 1 cup chopped pecans, toasted
    • two 8-oz packages cream cheese, softened
    • 1/2 cup sugar
    • 1 tsp vanilla extract
    • 2 large eggs
    • 1/2 cup semisweet chocolate chips, melted


    Instructions


    1. Preheat oven to 350 degrees. Combine the wafer crumbs and melted butter in a bowl and stir until crumbs are moist. With your hands, press the crumbs into the bottom of a 9-inch springform pan. Place on a baking sheet and bake for 10 minutes. Remove from oven and set aside until ready to use.
    2. In a heavy 1-1/2 qt saucepan, melt caramels with evaporated milk over low heat, stirring frequently, until smooth. Pour mixture over prepared crust. Sprinkle the chopped pecans evenly on top.
    3. Combine the cream cheese, sugar and vanilla in a large bowl with an electric mixer until well blended. Beat in eggs one at a time, mixing well after each addition. Blend in melted chocolate. Pour the mixture over the pecans.
    4. Bake for 40 minutes, or until cheesecake is set. Remove from the oven and run a small knife around the outside of the cake to loosen the edges. Let cheesecake cool before removing the rim and then refrigerate until firm, at least 2 hours. Garnish with whipped cream and more pecans, if desired.
