List of Ingredients
- 1/2 cup butter, softened
- 1 cup packed brown sugar
- 1 egg
- 1 tsp vanilla
- 1 3/4 cups flour
- 1/2 tsp baking soda
- 1/4 tsp salt
- 2/3 cup flaked coconut - or - chopped pecans
Instructions
- In a large bowl cream the butter and the sugar.
- Add the egg and the vanilla. Mix well.
- Combine the flour, baking soda and the salt.
- Gradually add to the creamed mixture.
- Fold in the pecans or the coconut. The Dough Will Be Sticky.
- Shape into two rolls. Wrap each roll in plastic wrap. Refrigerate for four hours or overnight.
- Unwrap the rolls and cut into 1/4 inch slices. Place two inches apart on ungreased baking sheets. Bake at 375 or 7-10 minutes or until set. Remove to wire racks and cool.
