    List of Ingredients


    • 1/2 cup butter, softened
    • 1 cup packed brown sugar
    • 1 egg
    • 1 tsp vanilla
    • 1 3/4 cups flour
    • 1/2 tsp baking soda
    • 1/4 tsp salt
    • 2/3 cup flaked coconut - or - chopped pecans


    Instructions


    1. In a large bowl cream the butter and the sugar.
    2. Add the egg and the vanilla. Mix well.
    3. Combine the flour, baking soda and the salt.
    4. Gradually add to the creamed mixture.
    5. Fold in the pecans or the coconut. The Dough Will Be Sticky.
    6. Shape into two rolls. Wrap each roll in plastic wrap. Refrigerate for four hours or overnight.
    7. Unwrap the rolls and cut into 1/4 inch slices. Place two inches apart on ungreased baking sheets. Bake at 375 or 7-10 minutes or until set. Remove to wire racks and cool.
