    • 2 1/4 cups flour
    • 1/2 tsp baking powder
    • 1/2 tsp baking soda
    • 1/4 tsp salt
    • 3 large eggs
    • 1 cup sugar
    • 1 1/2 tsps vanilla
    • 1 1/4 cups unsalted pistachios
    • 3/4 cup dried cranberries


    Instructions


    1. Preheat oven to 300 degrees. Grease and flour long baking sheet.
    2. Into large bowl, sift flour, baking powder, baking soda and salt. In medium bowl, whisk eggs with sugar until well blended. Whisk in vanilla. Stir egg mixture into flour mixture until blended. Stir in chopped pistachios and cranberries.
    3. Spoon dough onto prepared baking sheet, forming 2 (13 x 2 1/4") strips, about 3 1/2" apart. With wet fingers, smooth tops and sides.
    4. Bake 40 minutes or until golden brown and firm when touched. Place baking sheet on wire rack for 5 minutes. Reduce oven heat to 275 degrees. Using sharp, serrated knife, cut each strip diagonally into 1/2" slices. Stand slices about 1/2" apart on baking sheet. Bake 20-25 minutes, until lightly toasted. Cool completely on baking sheet over wire rack.
