Crisp Almond Cookies

- 1 cup (2 sticks) butter, softened
- 1 cup confectioners' sugar
- 1 large egg
- 1 1/2 tsps almond extract
- 1 3/4 cups flour
- 1/2 cup slivered almonds, toasted
Instructions
- Preheat oven to 350 degrees. Combine butter and confectioners' sugar in a large bowl. Beat with an electric mixer on high speed until creamy, 3-4 minutes.
- Add egg and almond extract; beat well. Add flour; beat on low speed until well blended and a dough forms. Add toasted almonds; stir to combine.
- Drop dough by tablespoonfuls 2" apart onto ungreased baking sheets. Bake cookies until browned around the edges and set in the centers, 14-16 minutes. Transfer cookies to wire racks to cool.
