    The crisp, lacy texture of these cookies is irresistible. Don't be tempted to bake them for less time to get chewy cookies - they won't hold together.


    List of Ingredients


    • 3 3/4 cups uncooked regular oats, divided
    • 1 cup unsalted butter, softened
    • 1 1/4 cups firmly packed light brown sugar
    • 1/4 cup granulated sugar
    • 2 large eggs
    • 2 T milk
    • 2 tsp vanilla extract
    • 1/2 cup all-purpose flour
    • 1 tsp baking soda
    • 1/2 tsp salt
    • 1 3/4 cups semisweet chocolate morsels
    • 1 cup chopped pecans, toasted
    • 1 cup crispy rice cereal
    • 3/4 cup butterscotch morsels


    Instructions


    1. Place 1 cup oats in a blender or food processor; process until finely ground. Set aside.
    2. Beat butter at medium speed with an electric mixer until creamy. Gradually add sugars, beating well. Add eggs, 1 at a time, beating well. Add milk and vanilla; beat well.
    3. Combine ground oats, flour, baking soda, and salt; add to butter mixture, and beat well. Add unprocessed oats; beat well. Stir in chocolate morsels and remaining ingredients.
    4. Drop dough by tablespoonfuls onto ungreased baking sheets. Bake at 350 degrees for 14 minutes. Cool on pans 1 minute. Remove to wire racks to cool.
