    Georgia Peanut Butter Raspberry Cookies

    • 1 3/4 cups all-purpose flour
    • 1 tsp baking soda
    • 1/2 tsp salt
    • 1/2 cup creamy peanut butter
    • 1/2 cup unsalted butter, room temperature
    • 1/2 cup sugar, plus more for rolling
    • 1/2 cup light brown sugar, packed
    • 1 large egg
    • 1 1/2 tsp pure vanilla
    • 3/4 cup seedless raspberry jam


    Instructions


    1. Preheat oven to 375 degrees.
    2. In a small bowl, combine flour, baking soda, and salt; set aside.
    3. In a large bowl, cream together peanut butter, butter, sugar, and brown sugar. Add egg and vanilla, mix until light and fluffy.
    4. Gradually add flour mixture to butter mixture. Beat until combined.
    5. Roll dough into 1" balls. Roll balls in sugar. Place balls 3" apart on ungreased cookie sheet. Gently press thumb in center of each cookie.
    6. Bake in top half of oven until lightly browned, 8 to 10 minutes.
    7. Press thumb gently in center of each cookie, while warm, if deeper indentation is needed. Fill with 1/2 tsp of raspberry jam.
    8. Transfer to wire rack to cool.

    Makes about 3 dozen cookies
