Honey Nut Crisps

This is one of the most elegant and delicious dropcookies of all. The flavor and texture are both delicate. Try almonds or filberts or hickory nuts for variety.
List of Ingredients
- 1/2 cup butter, at room temperature
- 1/2 cup oil
- 1/2 cup brown sugar
- 1 cup honey
- 1 teaspoon vanilla extract
- 2 cups whole wheat pastry flour
- 1 cup unbleached white flour
- 1 teaspoon ground cinnamon
- 1/2 teaspoon salt
- 2 cups walnuts, finely chopped or 2 cups pecans, finely chopped
- 1 egg
- 2 teaspoons baking powder
Instructions
- Cream together the butter and oil; add the sugar and cream again.
- Beat in the honey, egg, and vanilla. Sift together the flours, baking powder, cinnamon, and salt. Fold into the creamed mixture. Stir in the nuts.
- Drop by the teaspoon, about 2 inches apart, onto lightly greased cookie sheets.
- Bake in a preheated 350 F. oven for 10 to 12 minutes.
