    Peanut Butter Crunch Cookies

    List of Ingredients


    • 1 cup firmly packed light brown sugar
    • 3/4 cup butter, softened
    • 3/4 cup peanut butter
    • 1/2 cup sugar
    • 2 large eggs
    • 1 tsp vanilla
    • 2 1/2 cups flour
    • 1 tsp baking soda
    • 2 cups crisp rice cereal


    Instructions


    1. Preheat oven to 375 degrees.
    2. Combine brown sugar, butter, peanut butter and sugar in large bowl. Beat with electric mixer set on medium-high speed until creamy, 1-2 minutes. Add eggs and vanilla; beat until well blended.
    3. Add flour and baking soda to brown sugar mixture; beat on low speed until well combined. Stir in cereal with spoon. Drop dough by rounded T 2" apart onto ungreased baking sheets.
    4. Bake cookies until lightly golden, 8-10 minutes. Cool on baking sheets for 1 minute. Remove cookies from baking sheets; cool completely on wire racks.
