Pecan Shortbread

- 1/2 lb unsalted butter, softened
- 1/2 cup powdered sugar
- 2 cups flour
- 1/4 tsp salt
- 1 cup pecan pieces
Instructions
- Preheat the oven to 350 degrees.
- In the bowl of an electric mixer, cream butter and sugar. Slowly add flour, then salt. Fold in pecan pieces.
- Roll dough into a ball, wrap in plastic, and refrigerate 30 minutes. On a floured surface, roll dough out 1/4" thick. Cut into desired shapes. Transfer the cookies to an ungreased cookie sheet. Prick the cookies with a fork, and chill again 20 minutes.
- Bake 20 minutes, or until edges are lightly browned.
