Pumpkin Oatmeal Cookies




List of Ingredients



• 1 cup canned pumpkin
  
• 1 cup sugar
  
• 1 3/4 cups rolled oats
  
• 1 egg (beaten)
  
• 1 1/2 cups flour
  
• 3/4 cup shortening
  
• 2 cups nuts, chopped (optional)
  
• 1/2 tsp baking soda
  
• 1/4 tsp nutmeg
  
• 3/4 tsp cinnamon
  
• 1 tsp salt
  






Instructions



1. Preheat oven to 400 degrees.
   
2. In mixing bowl, stir together flour, sugar, baking soda, cinnamon, nutmeg and salt. Add and mix shortening. Stir until mixture is crumbly. Stir in egg, pumpkin, oats and nuts.
   
3. Drop teaspoonfuls of dough onto an ungreased cookie sheet.
   
4. Bake 15 minutes or until done.

Makes about 5 dozen.
