    Recipe Introduction


    Vibrantly flavored with red wine and Italian Seasoning, this slow cooker pot roast is zesty and robust. Serve with crusty rolls or garlic bread.


    List of Ingredients


    • 1 pound medium red potatoes (about 4), unpeeled and cut in 1-inch pieces
    • 1/2 pound baby carrots
    • 1 large onion, thickly sliced and separated into rings, divided
    • 2 1/2 pounds lean boneless beef chuck roast, well-trimmed and cut into 6 pieces
    • 2 packages (0.87 ounce each) McCormick® Brown Gravy Mix
    • 1 1/2 tablespoons flour
    • 2 1/2 teaspoons McCormick® Italian Seasoning
    • 1 teaspoon McCormick® Celery Salt
    • 1/2 cup water
    • 1/2 cup dry red wine
    • 1 tablespoon McCormick® Parsley Flakes


    Instructions


    1. Place potatoes, carrots, half of the onion slices and beef in order listed in a 3 1/2 or 4-quart crockery slow cooker.

    2. Combine gravy mixes, flour, Italian seasoning and celery salt in small bowl. Sprinkle half over beef. Turn beef over and sprinkle with remaining seasoning mixture.
    3. Top beef with remaining onion slices. Combine water and wine and pour over all. Cover and cook on LOW for 8 hours or until beef is done and vegetables are tender. Add parsley flakes; stir well.
    4. Remove beef and vegetables to serving platter. Spoon some sauce over beef and vegetables. Serve remaining sauce on side, if desired. Thicken sauce if desired.
