    • 1 1/2 lb flank steak
    • 8 oz cornbread stuffing
    • 3/4 cup chopped onion
    • 3/4 cup chopped celery
    • 1/4 cup chopped fresh parsley
    • 2 eggs
    • 1 1/4 cups beef broth
    • 1/3 cup melted butter
    • salt and pepper, to taste


    Instructions


    1. In a large bowl combine stuffing, onion, celery, and parsley. In a small bowl beat the eggs and add beef broth. Pour into stuffing mixture and mix well. Add salt and pepper to taste.
    2. Pound steak until 1/2" thick. Spread cornbread stuffing over steak. Roll up, starting with the long side, tie with string.
    3. Place steak in the slow cooker. Cook on low heat for 6-8 hours.
    4. Note: Do not add liquid. The moisture will come from the meat.
