    Frozen Berry Cobbler

    After a hearty winter supper, I like to serve a little something sweet, like a mixed berry cobbler with luscious whipped cream and a biscuit topping. But you don’t have to wait ‘til summer to get the berries. Use frozen ones!


    List of Ingredients


    • For Fruit Mixture:
    • 9 cups frozen berries (any kind you like – I used half raspberry and half blackberry)
    • 3/4 cup seedless raspberry jam
    • 4 tablespoons cornstarch
    • 1/2 cup sugar
    • 1 1/2 tablespoon Cointreau (or any orange-flavored liqueur)
    • 2 1/2 tablespoons butter
    • For Biscuit Topping:
    • One can commercially prepared biscuits
    • Zest of one orange finely chopped
    • 4 teaspoons sugar
    • Optional Topping:
    • Cool Whip
    • Orange Zest


    Instructions


    1. Preheat oven to 425 degrees. Grease a 9”x13” ovenproof baking dish.
    2. In a large bowl, gently combine berries, jam, cornstarch, sugar and Cointreau. Place in prepared baking dish and dot top with butter.
    3. Bake for 20-25 minutes or until berries begin to bubble.
    4. While berries are baking, roll out prepared biscuit to about 1/2 inch thickness. Sprinkle each biscuit lightly with orange zest and press lightly to adhere it. Then sprinkle each biscuit with 1/2 teaspoon sugar and press lightly to help the sugar adhere – brush off any excess. Cut 6 biscuits into large squares (if desired cut the last two biscuits into sugar-cube size to use as garnish).
    5. Now top the bubbling berries with biscuits. Put them back in oven and bake according to the instructions on the can. Remove the cobbler when the biscuits are golden brown.
    6. Top with cool whip and orange zest, if desired. Serve warm.
