    Bring the wonderful taste of Maine blueberries to your dessert table with this summertime favorite.


    List of Ingredients


    • 2 pints fresh blueberries
    • 1/2 cup granulated sugar
    • 2 tablespoons fresh lemon juice
    • 2 teaspoons cornstarch
    • 1/2 teaspoon ground cinnamon
    • For the Topping:
    • 3/4 cup all-purpose flour
    • 1 teaspoon baking powder
    • 1/2 teaspoon ground cardamom
    • 1/4 teaspoon salt
    • 1/3 cup granulated sugar
    • 3 tablespoons butter, softened
    • 1 large egg
    • 2 teaspoons vanilla extract
    • 1/3 cup heavy cream
    • For the Garnish:
    • Confectioners’ sugar
    • Whipped cream
    • Fresh blueberries


    Instructions


    1. Preheat oven to 375F.
    2. In a saucepan, mix together blueberries and sugar. Cook over medium heat until mixture boils.
    3. Mix together lemon juice, cornstarch and cinnamon; stir into berry mixture. Cook, stirring constantly, until thickened, 2 minutes. Spoon berry mixture into a 9-inch round baking dish or pie pan.
    4. To prepare topping, mix together flour, baking powder, cardamom, and salt. Beat together sugar, butter, egg, and vanilla at medium speed until light and fluffy. At low speed, beat in flour mixture until combined. Beat in cream. Spoon topping over berry mixture.
    5. Bake cobbler until golden, 30 minutes. Transfer pan to a wire rack to cool slightly. Dust cobbler with confectioners’ sugar. Garnish with whipped cream and blueberries.
