    Recipe Introduction


    Flan is a Mexican and Spanish caramel-topped custard, traditionally made in single-serving molds and served col. This version is a rich chocolate-cinnamon flan.


    List of Ingredients


    • TOPPING:
    • 3/4 cup sugar
    • 1/2 cup water
    • FLAN:
    • 1/2 cup sugar
    • 1/4 cup unsweetened cocoa
    • 1/2 tsp cinnamon
    • 3 eggs, beaten
    • 1/2 tsp vanilla
    • 2 cups warm milk


    Instructions


    1. Heat oven to 325 degrees. In small heavy saucepan, combine 3/4 cups sugar and water. Bring to a boil over medium heat. Cover; boil 1 minute. Uncover; cook until sugar becomes golden brown. DO NOT STIR. Very carefully pour and swirl sugar into bottom of 6 (6 oz) custard cups.
    2. In large bowl, combine 1/2 cup sugar, cocoa and cinnamon; mix well. Stir in eggs and vanilla. Gradually add milk; blend well. Pour mixture evenly over sugar in custard cups. Place custard cups in 12x8-inch (2 quart) baking dish. Fill baking dish with hot water halfway up sides of custard cups.
    3. Bake for 50 to 55 minutes. Remove cups from water; cool 5 minutes or until slightly cooled. Refrigerate 50 minutes or until well chilled.
    4. To serve, unmold flans onto individual dessert plates. If desired, top each with chocolate shavings. Store any remaining flan in refrigerator.

    MAKE IT SPECIAL: Before unmolding the flans, decorate the dessert plates. Sprinkle cinnamon over each entire plate, then drizzle the plates with purchased chocolate sauce. Unmold the flans onto the plates and garnish them with shaved chocolate or chocolate curls.
