    Strawberry-Brown Sugar Shortcake


    List of Ingredients


    • 3 cups all-purpose flour
    • 1 1/2 tsp baking powder
    • 1/2 tsp salt
    • 1/3 cup firmly packed brown sugar
    • 2 tsp ground cinnamon, divided
    • 1/4 cup shortening
    • 1/4 cup butter or margarine, cut up
    • 1 1/3 cups buttermilk
    • 2 T butter or margarine, melted
    • 2 T brown sugar
    • 1 T sugar
    • 4 cups sliced fresh strawberries
    • 1/2 cup firmly packed brown sugar
    • 1 cup whipping cream
    • 2 T powdered sugar


    Instructions


    1. Stir together first 4 ingredients and 1 tsp cinnamon in a large bowl. Cut shortening and 1/4 cup butter into flour mixture with a pastry blender until crumbly; add buttermilk, stirring until dry ingredients are moistened.
    2. Turn dough out onto a lightly floured surface; knead 3 to 4 times.
    3. Pat or roll dough to 3/4" thickness; cut with a 3 1/2" scalloped cutter, and place on a lightly greased baking sheet.
    4. Bake at 400 degrees for 15 minutes or until golden. Brush shortcakes with 2 T melted butter. Combine 1/2 tsp cinnamon, 2 T brown sugar, and 1 T granulated sugar; sprinkle evenly over shortcakes.
    5. Stir together strawberries, 1/2 cup brown sugar, and remaining 1/2 tsp cinnamon. Cover and chill.
    6. Beat whipping cream at high speed with an electric mixer until foamy; gradually add powdered sugar, beating until soft peaks form.
    7. Cut shortcakes in half horizontally, and serve with strawberries and sweetened whipped cream.
