    Warm Blueberry Biscuit Shortcakes

    Source of Recipe

    Homemade In Half The Time

    Recipe Introduction

You can savor a taste of summer anytime with these oh-so-easy berry delights.

    List of Ingredients

    • 1 tube (16 oz) large-size refrigerated biscuits (8 biscuits)
    • 2 T brown sugar
    • 1/4 tsp ground cinnamon
    • 2 T frozen limemade concentrate
    • 1/4 cup granulated sugar
    • 2 tsps cornstarch
    • 1 bag (12 oz) frozen loose-pack blueberries, thawed
    • 1 can (7 oz) refrigerated whipped cream

    Instructions

    1. Preheat the oven to 350 degrees.
    2. Place the biscuits on a baking sheet. On a small sheet of waxed paper, combine the brown sugar and cinnamon. Set half of the mixture to one side. Use the remainder to sprinkle over the biscuits. Bake for 18 minutes, or until browned. Remove to a rack.
    3. Meanwhile, in a saucepan, combine the limeade concentrate, granulated sugar, and cornstarch. Whisk until smooth. Add the berries (with juice). Cook, stirring constantly, over medium-high heat for about 5 minutes, or until the mixture is thickened. Allow to cool for 10 minutes.
    4. Split the reserved biscuits in half. Place the bottoms, cut side up, on individual plates or a platter. Sprinkle with the reserved cinnamon sugar. Spoon the berry mixture over the bottoms. Spritz generously with whipped cream. Cover with the biscuit tops. Spritz whipped cream on top.
