    Recipe Introduction


    A frittata is an Italian-style open faced omelet. Equally delicious served warm or at room temperature, it's a fantastic one dish breakfast.


    List of Ingredients


    • 2 T olive oil
    • 1/2 bag (16 oz) refrigerated rosemary and roasted garlic diced red potatoes
    • 1 can (14 oz) diced tomatoes with zucchini, bell pepper, and carrots, drained and patted dry
    • 6 eggs
    • 1/4 cup water
    • 1/2 tsp ground black pepper
    • 1/2 cup (2 oz) precrumbled feta cheese


    Instructions


    1. In a large nonstick skillet, heat the oil over medium-high heat. ADd the potatoes and tomatoes. Cook for 3 minutes, stirring occasionally, or until heated through.
    2. In a bowl, beat the eggs, water, and pepper. Pour into the skillet. Cook for 1 minute, or until the edges start to set. With a spatula, carefully lift up the edge to let the uncooked egg run underneat. Sprinkle on the cheese. Cover and reduce the heat to low. Cook for 2 minutes, or until the eggs are cooked through.
