    Cotija is a white Mexican cheese similar to Queso Fresco and Greek feta. Feel free to substitute if you cannot find Cotija in your market.


    List of Ingredients


    • 1 cup canned refried beans
    • Two 8-inch flour tortillas
    • 1 tablespoon extra-virgin olive oil
    • 2 medium tomatoes, minced
    • 1 clove garlic, minced
    • 1/2 teaspoon cumin
    • 1 teaspoon pepper
    • 1 teaspoon salt
    • 1/2 cup crumbled Cotija cheese
    • 4 teaspoons sour cream (garnish)


    Instructions


    1. Prepare tortillas: Preheat oven to 350 degrees F. Spread refried beans evenly over one tortilla on a baking sheet.
    2. Cook the filling: In a medium skillet, heat oil; sauté tomato and garlic with cumin, pepper, and salt until soft -- about 4 minutes. Spread on top of refried beans. Sprinkle with cheese.
    3. Bake and serve: Place second tortilla over the filled one and bake in the oven until golden -- 10 to 15 minutes -- taking care not to let the edges burn. Transfer to a cutting board and cut into wedges. Serve warm or at room temperature.
