    Cannellini Beans w/ Grilled Italian Saus

    Recipe Introduction


    This rustic, hearty dish is perfect for a winter's evening. Serve alongside a crusty loaf of Italian bread and a dish of high-quality olive oil for dipping.


    List of Ingredients


    • 2 1/2 T olive oil
    • 1 clove garlic, minced
    • 1 onion, chopped
    • 1 (28 oz) can whole plum tomatoes, drained and coarsely chopped, with 1/2 cup juice reserved
    • 1 tsp crushed red pepper
    • 3 (15 oz) cans cannellini beans, rinsed and drained
    • 2 1/2 tsp kosher salt
    • cooking spray
    • 6 sweet or hot Italian sausages
    • 1 bunch arugula or 1/2 bunch escarole, washed and stemmed
    • 1 T minced fresh sage


    Instructions


    1. In a large nonstick pan, heat 1 1/2 T oil and garlic over medium heat for 2 minutes. Add onion; cook until it's translucent, about 4 minutes. ADd tomatoes, juice and crushed red pepper, and simmer for 2 minutes. Add beans and salt, stir, cover and simmer for 20 minutes.
    2. Heat a grill pan over meidum-high heat and coat with cooking spray. Add sausages and cook onl all sides until nicely grilled, about 10 minutes. Remove from pan and slice in half lengthwise. Return sausages to pan, cut side down and cook through, 5 minutes.
    3. Just before serving, add arugula to beans, stir to combine, cover and cook for 3 minutes, or until arugula wilts. Add sage and remaining 1 T oil. Serve with sausage.
