    List of Ingredients


    • 1 egg white
    • 3 T cornstarch, divided
    • 3 T soy sauce, divided
    • 2 lbs fresh boneless, skinless chicken breasts, cut into 1" pieces
    • 2 cups vegetable oil
    • 2 green onions, trimmed and chopped
    • 2 T chopped, seeded green chile peppers
    • 1 T grated gingerroot
    • 1 clove garlic, crushed
    • 1/4 cup chicken broth
    • 2 T sugar
    • 1 1/2 tsp vinegar
    • 1 tsp sesame oil


    Instructions


    1. In a large bowl, combine egg white, 1 T cornstarch, and 1 T soy sauce. Stir in chicken pieces; refrigerate for 2 hours.
    2. After chicken has marinated, heat oil to 350 degrees in a large heavy saucepan. Fry chicken for 1 to 2 minutes or until crisp; drain on paper towel and set aside.
    3. Drain all but 2 T oil from the pan. Add green onions, chile peppers, gingerroot and garlic to pan. Cook over medium-high heat, stirring constantly, until fragrant, about 1 minute.
    4. In a small bowl, whisk together chicken broth and remaining 2 T cornstarch.
    5. To the pan, add chicken, sugar, remaining 2 T soy sauce, vinegar and cornstarch mixture. Remove from heat and stir in sesame oil. Serve hot.
