    • Marinade:
    • 4 scallions, thinly sliced
    • 1/4 cup chopped cilantro
    • 2 tablespoons. lime juice
    • 2 cloves garlic, crushed in garlic press
    • 1/2 teaspoon salt
    • Marinated Avocados:
    • 2 avocados, pitted, peeled, and cut in large chunks
    • 1/4 teaspoon salt
    • Black Bean Salad:
    • 1 can (16-19 ounces) black beans, drained and rinsed
    • 1/2 cup green chili salsa
    • 1/2 cup chopped celery
    • Fajitas:
    • 1 tablespoon + 1 teaspoon vegetable oil
    • 1 tablespoon red wine vinegar
    • 1/2 teaspoon dried oregano
    • 1/2 teaspoon salt/1/8 teaspoon freshly ground pepper
    • 1 beef flank steak (11/4 pound)
    • 1 red bell pepper, cut in half and seeded/1 yellow bell pepper, cut in half and seeded
    • 1 large onion, sliced thickly
    • 12 flour tortillas
    • Garnishes:
    • Cilantro sprigs/Sour cream
    • Diced tomato/Green chili salsa


    Instructions


    1. Mix ingredients for marinade. Sprinkle avocados with 1/4 teaspoon salt; add half of marinade. In another bowl, combine beans, salsa, and celery; stir in remaining marinade.
    2. Preheat grill or broiler. Combine 1 tablespoon oil, vinegar, oregano, salt, and pepper in plastic resealable bag. Add flank steak and marinate 15 minutes.
    3. Brush peppers and onion with remaining 1 teaspoon oil. Cook 5 minutes per side. Cook beef 5 to 6 minutes per side for medium-rare.
    4. Warm tortillas according to package directions. Slice peppers. Thinly slice meat against the grain. To serve: Place slices of beef, peppers, and onions in tortillas and garnish with cilantro, sour cream, tomatoes, and salsa.
