    Recipe Introduction


    Besides being a wonderful dip for pita chips or raw vegetables, this simple spread makes wonderful veggie sandwiches - some tomato slices, crisp lettuce leaves, and red onion on whole grain bread.


    List of Ingredients


    • 3 cloves garlic
    • 1 can (15.5 oz) garbanzo beans, drained
    • 1/2 cup plain non-fat yogurt
    • 2 T lemon juice
    • 2 tsp olive oil
    • 1/2 tsp salt
    • 1/2 tsp ground cumin
    • 1/8 tsp allspice


    Instructions


    1. Pierce garlic cloves with a fork on all sides; wrap in wax paper. Microwave on HIGH for 4 to 5 minutes or until soft to the touch, turning upside-down midway through; cool.
    2. In a food processor, combine garbanzo beans, yogurt, lemon juice, oil, salt, cumin and allspice. Squeeze the pulp from the garlic cloves into mixture. Process until smooth. Serve with vegetables or toasted pita bread.
