    List of Ingredients


    • 1 lb boneless, skinless chicken breast
    • 1 T olive oil
    • 1 cup carrot, cut into slivers
    • 1 cup yellow squash, cut into slivers
    • 1 cup zucchini, cut into slivers
    • 1 cup red onion, cut into wedges
    • 1/2 cup roasted sweet peppers
    • 1/4 cup garbanzo beans
    • 1/2 cup prepared Caesar salad dressing
    • 1 (6.2 oz) pkg lentil curry couscous
    • 1/4 cup pitted kalamata olives


    Instructions


    1. In large skillet over medium-high heat, cook chicken in oil 4 to 5 minutes or until no longer pink.
    2. Add carrot, yellow squash, zucchini, and onion. Cook 4 minutes longer or until vegetables are crisp-tender. Stir in roasted sweet peppers, garbanzo beans, and dressing. Cook 2 to 3 minutes or until thoroughly heated.
    3. Prepare couscous according to package directions. Serve chicken mixture over couscous. Sprinkle with olives.
