    • 2 zucchini (about 1 lb each)
    • 1 lb ground round steak
    • 1/2 cup bread crumbs
    • 1/2 small onion, finely chopped
    • 1 large garlic clove, minced
    • 1/2 cup grated Romano cheese
    • 3 large basil leaves, crushed
    • 1 egg
    • 1/2 tsp salt
    • 1/2 tsp black pepper, freshly ground
    • 1/2 tsp garlic salt
    • 1 recipe Special Tomato Sauce (see sauces)


    Instructions


    1. Cut the ends off the zucchini and cut into 3 pieces. Put them into lightly salted boiling water and cook for 5 minutes. Cut each piece in half and scoop out the seeds and set in a oiled baking pan that will hold the 12 pieces flat on the bottom.
    2. Heat 2 T oil in a skillet and saute the onion for 3 minutes. Place the bread crumbs, garlic, cheese, basil, egg, pepper and salt in a bowl. Mix and combine it. Add the onion and ground beef. Mix well and shape into 12 pieces that will fit inside the zucchini's. Bake for 25 minutes in a 400 degree oven. Cover with the sauce and bake another 10 minutes. Sprinkle with additional cheese, if desired.
