    • 1 lb. Lamb Chops
    • 3 cloves Garlic minced
    • 3 Tbsp. Olive Oil
    • 2 Tbsp. Lemon Juice
    • 1/4 tsp. Salt
    • 1/4 tsp. Black Pepper
    • 6 Mission® 98% Fat Free Soft Taco Size Flour Tortillas
    • 1 batch Tomato & Mint Salsa*
    • Feta Cheese


    Instructions


    1. Trim all fat and bone from lamb chops and cut into 1” chunks. Combine with garlic, oil, lemon juice, salt and pepper. Cover and refrigerate overnight.

    2. Place 3 or 4 pieces of the marinated lamb onto skewers and grill or broil to desired doneness.
    3. Serve skewers with warm tortillas, tomato & mint salsa and feta cheese.

    Tomato & Mint Salsa

    2 Roma Tomatoes
    2 Tbsp. fresh Mint minced
    1 tsp. Lemon Juice
    2 tsp. Shallots finely minced
    1/4 tsp. fresh Oregano
    1/8 tsp. Salt
    1/8 tsp. Black Pepper

    Blanch tomatoes by dipping in boiling water for 10 seconds then immediately into ice water. Remove peel, seed and dice tomatoes. Combine together with the remaining ingredients.
