- 1 lb. Lamb Chops
- 3 cloves Garlic minced
- 3 Tbsp. Olive Oil
- 2 Tbsp. Lemon Juice
- 1/4 tsp. Salt
- 1/4 tsp. Black Pepper
- 6 Mission® 98% Fat Free Soft Taco Size Flour Tortillas
- 1 batch Tomato & Mint Salsa*
- Feta Cheese
Instructions
- Trim all fat and bone from lamb chops and cut into 1” chunks. Combine with garlic, oil, lemon juice, salt and pepper. Cover and refrigerate overnight.
- Place 3 or 4 pieces of the marinated lamb onto skewers and grill or broil to desired doneness.
- Serve skewers with warm tortillas, tomato & mint salsa and feta cheese.

Tomato & Mint Salsa
2 Roma Tomatoes
2 Tbsp. fresh Mint minced
1 tsp. Lemon Juice
2 tsp. Shallots finely minced
1/4 tsp. fresh Oregano
1/8 tsp. Salt
1/8 tsp. Black Pepper
Blanch tomatoes by dipping in boiling water for 10 seconds then immediately into ice water. Remove peel, seed and dice tomatoes. Combine together with the remaining ingredients.
