    Orange Beef and Broccoli Stir-Fry

    Recipe Introduction


    Serve the stir-fry over brown or white rice, or try buckwheat noodles for a different flavor and texture.


    List of Ingredients


    • 1/4 cup low-sodium beef broth or water
    • 1 T soy sauce
    • 1 T lemon juice
    • 2 tsp cornstarch
    • 1 T vegetable oil
    • 1 lb top round London broil, cut into strips
    • 1 (10 oz) pkg frozen broccoli spears, thawed and patted dry
    • 2 T grated orange zest
    • 1/4 cup fresh orange juice
    • salt and pepper


    Instructions


    1. Whisk together broth, soy sauce, lemon juice and cornstarch in a bowl; set aside.
    2. Warm oil in a wok or large skillet over medium-high heat until hot. Add beef, turn heat to high and cook, stirring constantly, until no longer pink, 2 to 3 minutes.
    3. Add broccoli and cook, stirring, until warmed through, about 2 minutes.
    4. Stir in reserved sauce, orange zest and juice. Cook, stirring constantly, until sauce is thickened, about 2 minutes. Season with salt and pepper.


    Final Comments


    Serves: 4

    *BE FRESH: Replace the frozen broccoli with fresh; cook it in boiling salted water for 2 minutes first.

    *GET CREATIVE: Toss in chopped fresh ginger, sliced scallions, strips of red and yellow bell peppers or slivered snow peas before serving to dress up the dish.

    INTENSIFY THE FLAVOR: If time permits, marinate the beef overnight in a mixture of orange zest, chopped fresh thyme, a crushed clove of garlic and olive oil. Pat the meat dry before starting to cook the stir fry.
