    Polenta with Sausage & Mushrooms

    List of Ingredients


    • 1 pkg ground turkey sausage
    • 2/3 cup chopped pecans
    • 4 T chopped onions
    • 1 1/2 cups sliced fresh shiitake mushrooms, stems discarded
    • 3/4 cup chicken broth
    • 2 pkgs (12 oz each) prepared polenta, each sliced into 12 rounds
    • 2 T melted butter or olive oil
    • 3/4 cup crumbled goat cheese
    • 2 T chopped fresh sage


    Instructions


    1. Preheat oven to 350 degrees.
    2. In large skillet, toast pecans over medium heat until fragrant; remove nuts and set aside.
    3. In same skillet, combine sausage, onions, mushrooms and sage over medium high-heat until sausage is cooked thoroughly. Add broth; cover and cook 1 minute. Uncover, raise heat; boil until liquid is reduced by half. Remove from heat and keep warm.
    4. On a non-stick baking sheet, brush polenta slices with butter or oil. Bake 15 minutes, then broil 4" from heat until golden.
    5. To serve, arrange polenta on plate, top with sausage mixture and sprinkle with goat cheese and nuts.
