    Sesame Vegetable Noodles

    List of Ingredients


    • 7 oz vermicelli
    • 3 T dark sesame oil, divided
    • 2 cups fresh sugar snap peas or snow pea pods
    • 2 cups broccoli florets
    • 1 large red bell pepper, cut into strips
    • 2 carrots, shredded
    • 4 green onions, sliced diagonally
    • 2 garlic cloves, pressed
    • 1 tsp grated ginger
    • 1/4 tsp dried, crushed red pepper
    • 1/4 cup soy sauce
    • 1 T water
    • 1 T toasted sesame seeds (optional)


    Instructions


    1. Prepare pasta according to package directions. Heat 2 T oil in a wok or large skillet over medium-high heat for 1 minute or until hot. Add peas and next 7 ingredients and stir-fry 5 to 7 minutes or until crisp-tender.
    2. Stir in soy sauce and water; add pasta to the skillet, tossing until thoroughly heated. Remove from heat, and toss with remaining 1 T oil. Add sesame seeds if you like. Serve immediately.

    Serves 4

    *Be prepared: keep ginger and sesame seeds on hand so you're always ready to add extra flavor to any savory dish. Look for jars of grated ginger in the produce section of the market. You'll find that sesame seeds at health food stores are a lot less expensive than those in the herb and spice aisle at the grocery store. Store them in an airtight container to they'll last longer.
