    Recipe Introduction


    Marinating the beef and vegetables in the lime-chili powder mixture gives these fajitas a Southwestern flavor.


    List of Ingredients


    • 1 lb boneless beef round steak, cut into 4x1/4-inch strips
    • 1 large red bell pepper, cut into strips
    • 1 large green bell pepper, cut into strips
    • 1 large onion, sliced
    • 1 tsp chili powder
    • 1 tsp grated lime peel
    • 1 garlic clove, minced
    • 1/2 tsp salt
    • 1/2 tsp cumin
    • 2 T oil
    • 2 T lime juice
    • 8 (10-inch) flour tortillas, heated


    Instructions


    1. In large bowl, combine beef, bell peppers and onion. In small bowl, combine chili powder, lime peel, garlic, salt, cumin, oil and lime juice; blend well. Pour lime mixture over beef mixture; cover and refrigerate 1 hour to marinate.
    2. Heat 12" nonstick skillet over medium-high heat until hot. Add beef mixture; cook and stir 6 to 8 minutes or until beef is browned.
    3. Spoon about 1/2 cup beef mixture onto half of each warm tortilla. Fold tortilla over filling. If desired, serve with chopped tomatoes, lettuce, salsa, sour cream and guacamole.
