Spicy Moroccan Beef with Mushroom Broche

- 1 cup olive oil
- 3 tablespoons paprika
- 1 1/2 tablespoons ground cumin
- 1/2 teaspoon ground red pepper
- 9 pounds top sirloin of beef; cut in 1 1/2 inch cubes
- 2 pounds, medium (96) fresh white or crimini mushrooms
- Salt as, needed
- Fresh ground black pepper, as needed
Instructions
- Whisk oil together with paprika, cumin and red pepper; pour over meat. Marinate in refrigerator at least 8 hours or overnight. Drain, reserving oil.
- Thread 6 ounces beef cubes and 4 mushrooms alternately onto each of 24 skewers; refrigerate
- Brush mushrooms on 1 skewer with reserved oil. Grill or broil Brush mushrooms on 1 skewer with
reserved oil. Grill or broil, turning several times, until beef and mushrooms are browned and beef is done as ordered, about 8 minutes. Season to taste with salt and pepper.
