    Recipe Introduction


    Tiropites (teer OH pee tes) are small, golden feta-filled triangles, flaky and buttery on the outside and cheesy on the inside.


    List of Ingredients


    • 4 eggs
    • 1 lb feta cheese, crumbled
    • 2 pkgs (8 oz each) cream cheese, softened
    • 1 pkg (16 oz) phyllo dough, thawed
    • 1 lb butter, melted
    • 1/4 lb margarine, melted


    Instructions


    1. Separate eggs into 2 small mixing bowls. Lightly beat egg yolks. Beat eggs whites until foamy; gently fold in yolks; set aside.
    2. In a separate, larger bowl, combine feta and cream cheese until well blended; stir in eggs and set aside.
    3. Cut phyllo dough into strips about 2" wide. Combine melted butter and margarine in a small bowl. Brush one phyllo strip with butter mixture, place another strip on top and brush again. Place about 1 T of filling at the end of the strip, then fold one corner over filling to make a triangle. Continue folding from side to side as if you're folding a flag, maintaining the triangle shape , until the end of the strip is reached. Brush with butter mixture to seal and place on a baking sheet.
    4. Repeat with remaining strips. Phyllo dries out easily, so keep phyllo strips covered with a clean, damp kitchen towel until ready.
    5. Preheat oven to 350 degrees.
    6. Bake triangles on a cookie sheet for 5 minutes or until puffed. Reduce heat to 325 degrees and continue baking until golden brown about 20 to 25 minutes. Serve warm or at room temperature.
