    Turkey and Vegetable Stir-Fry

    List of Ingredients


    • 2 T Chinese chili paste with garlic
    • 1 T rice wine vinegar (or white vinegar)
    • 2 tsp soy sauce
    • 1 tsp cornstarch
    • 2 T vegetable oil (preferably peanut)
    • 4 cloves garlic, chopped
    • 2 T ginger root, finely chopped
    • 3 cups broccoli florettes (1 large head)
    • 3 cups bok choy, sliced (3 stalks)
    • 1 cup shiitake mushroom caps
    • 2 cups Honeysuckle White Thighs, cooked


    Instructions


    1. In a small bowl, stir together chili paste, vinegar, soy sauce, cornstarch and 2 T water; set aside.
    2. Heat oil in a wok or large skillet over high heat.
    3. Add garlic and ginger and stir-fry until fragrant, about 30 seconds. Add broccoli and bok choy and stir-fry until the broccoli is bright green, about 2 minutes. Add shiitakes and stir-fry until softened,a bout 1 minute. Add turkey meat and stir until heated through. Add reserved chili-paste mixture and stir until slightly thickened, about 1 minute.
    4. Serve immediately.
