    A great chicken recipe with a kick.


    List of Ingredients


    • 1 tablespoon canola oil
    • 1 red onion, cut into 3/4" cubes
    • 1 1/2 lbs skinless boneless chicken breast, cut into 3/4" cubes
    • 1 tablespoon Red Curry Paste
    • 1 teaspoon salt
    • 1 red bell pepper, cut into 3/4" cubes
    • 1 yellow bell pepper, cut into 3/4" cubes
    • 1 cup Coconut Milk
    • 1/2 cup salsa, hot or medium
    • 1/3 cup fresh squeezed lime juice
    • 1 tablespoon dark brown sugar
    • 4 1/2 cups cooked Jasmine Rice


    Instructions


    1. In a large nonstick skillet, heat oil over medium high heat.
    2. Add onions. Stir-fry until they start to brown, about 3-4 minutes.
    3. Add chicken. Stir-fry until the chicken begins to brown, about 3-4 minutes more.
    4. Stir in Red Curry Paste and salt. Cook stirring until the Curry Paste is dissolved and onions and chicken are well coated.
    5. Add red bell pepper and yellow bell pepper. Stirfry 1-2 minutes.
    6. In a medium bowl, whisk together Coconut Milk, salsa, lime juice and sugar until well mixed. Pour into the skillet. Bring to a boil. Reduce heat and simmer for 5-10 minutes more or until the sauce is smooth and the chicken is tender.
    7. Serve over hot Jasmine Rice.


    Final Comments


    Notes: For even more heat add an extra tablespoon of Curry Paste. Garnish with fresh wedges of lime and chopped cilantro if you like. Roasted garlic salsa is excellent in this dish.

    Yield: 6 Servings
