    Baked Deviled Orange Roughy


    List of Ingredients


    • 1 1/2 lbs fresh or frozen orange roughy fillets or other white fish fillets, 1/2" thick
    • 1 (8 oz) pkg cream cheese, softened
    • 2 T mayonnaise
    • 2 T milk
    • 1 T dry onion soup mix
    • 1 T lemon juice
    • 1 tsp dried tarragon, crushed
    • 1 tsp Dijon-style mustard
    • 1 1/2 cups soft wheat bread crumbs
    • 1 cup snipped parsley
    • 1/2 cup grate Parmesan cheese
    • 1 tsp paprika


    Instructions


    1. Thaw fish, if frozen. Cut fillets into 6 serving-size portions. Arrange fillets in a single layer in a greased shallow baking pan.
    2. In a small bowl combine cream cheese, mayonnaise, milk, onion soup mix, lemon juice, tarragon, and mustard. (Mixture may appear slightly lumpy.) Spread cream cheese mixture atop fillets.
    3. Bake in 450 degree oven for 10 to 12 minutes or till fish almost flakes with a fork.
    4. Meanwhile, combine bread crumbs, parsley, Parmesan cheese, and paprika; sprinkle atop fillets. Bake for 3 to 4 minutes more or till crumbs are golden and fish flakes easily with a fork.
    5. Transfer to dinner plates.
