    • 2 8 - 10 oz Snapper filets--skirts on
    • Cajun Injector Creole Butter Marinade
    • Cajun Shake seasoning
    • Cajun Injector Stove-Top Smoker with Hickory Smoking Chips


    Instructions


    1. Prepare smoker using instructions provided.
    2. Wrap Snapper filets in plastic wrap.
    3. Inject with marinade using 1 1/2 to 2 ounces of marinade per pound of meat.
    4. Remove plastic wrap.
    5. Sprinkle lightly with Cajun seasoning.
    6. Place fish on smoker rack, skin side down.
    7. Smoke for 20 minutes over medium heat.
