    List of Ingredients


    • 1 pound white flaky fish
    • 1 lime, juiced
    • 1 tablespoons ancho chili powder
    • 1 jalapeno, coarsely chopped
    • 1/4 cup chopped fresh cilantro leaves
    • 1/4 cup canola oil
    • 8 flour tortillas
    • Garnish:
    • Shredded white cabbage
    • Hot sauce
    • Sour cream
    • Thinly sliced red onion
    • Thinly sliced green onion
    • Chopped cilantro leaves
    • Tomato Salsa*


    Instructions


    1. Preheat grill to medium-high heat. Place fish in a medium size dish. Whisk together the oil, lime juice, ancho, jalapeno, and cilantro and pour over the fish. Allow to marinate for 15 to 20 minutes.
    2. Remove the fish from the marinade and place onto a hot grill, flesh side down. Grill for 4 minutes on the first side and then flip for 30 seconds.
    3. Remove. Allow to rest for 5 minutes. Next, flake the fish with a fork. Place the tortillas on the grill for 20 seconds. Divide the fish among the tortillas and garnish with your choice of garnish options.


    Final Comments


    Mexican Salsa

    In a blender
    * 1 16oz can tomatoes
    * 2 or 3 jalapeño peppers
    * 1/4 teaspoon of salt
    * 1/4 teaspoon of garlic
    * just a pinch of oregano
    * 1 teaspoon of olive oil


    Pour in a jar, add 1/2 cup of diced onion 2 tablespoons of fresh chopped cilantro. Keeps in refrigerator 7 or 8 days very well.
