    Flounder with Spinach-Ricotta Filling

    This fish dish is great for a family dinner. You can increase the recipe easliy to include more people.


    List of Ingredients


    • 2-pound flounder fillets
    • 2 10-ounce packages frozen chopped spinach, cooked
    • 1 cup ricotta cheese
    • 1/2 teaspoon basil
    • 2 tablespoons butter,melted
    • 2 tablespoons flour
    • 1/4 teaspoon salt
    • dash of pepper
    • 1 cup milk
    • 1/4 cup Parmesan cheese
    • 1/2 cup dry white wine (optional)
    • 1 teaspoon lemon juice


    Instructions


    1. Arrange half the fillets in greased backing dish.

    2. Mix drained spinach, ricotta, and basil in a bowl. Spoon over fillets, then top with remaining fillets.
    3. Blend butter, flour, salt, and pepper in a sauce pan. Add milk slowly and cook until thickened, stiring constantly. Add 1/4 cup cheese, wine(optional) and lemon juice. Spoon over top.
    4. Bake at 350 for 20 minutes or until fish flakes easily. Then sprinkle with Parmesan cheese. Broil until lightly browned.
