    A delightful mix of two herbs, basil and chives, plus a touch of balsamic vinegar, turns ordinary salmon fillets into a garden-fresh dinner. The topping is placed on the fish after it's turned, ensuring that every delicious morsel ends up on your plate, not on the grill.


    List of Ingredients


    • 4 (5- to 6-oz.) salmon fillets (1 inch thick)
    • 1/2 teaspoon freshly ground pepper
    • 1/4 teaspoon salt
    • 2 tablespoons minced fresh basil
    • 2 tablespoons chopped fresh chives
    • 1 tablespoon balsamic vinegar
    • 1 tablespoon grated lemon peel
    • 2 teaspoons extra-virgin olive oil


    Instructions


    1. Heat grill. Sprinkle salmon with pepper and salt. In small bowl, stir together all remaining ingredients.
    2. Oil grill grate well. Place salmon, skin-side up, on gas grill over medium heat or on charcoal grill 4 to 6 inches from medium coals; cover grill. Grill 6 minutes; turn and top with basil mixture. Grill 4 to 6 minutes or until salmon just begins to flake.
