    Recipe Introduction


    Roasting at high heat keeps the fish moist and flavorful. The combination of honey mustard and whole mustard seeds produces a lovely hot-sweet mustard flavor. Salmon steaks can be substituted for fillets.


    List of Ingredients


    • 1 (1 3/4 to 2 lb) salmon fillet
    • 1/4 cup honey mustard
    • 2 T butter, melted
    • 2 T chopped fresh dill
    • 1 T lemon juice
    • 1 tsp whole mustard seeds, lightly crushed*
    • 1/4 tsp freshly ground pepper
    • lemon wedges
    • dill sprigs


    Instructions


    1. Heat oven to 475 degrees. Grease rimmed baking sheet. Place salmon, skin-side down, on baking sheet. In small bowl, stir together honey mustard, butter, chopped dill, lemon juice, mustard seeds and pepper. Spread over salmon.
    2. Bake salmon 10 to 12 minutes or until fish just begins to flake. Heat broiler. Broil 3 to 4 inches from heat 1 minute or until lightly browned.
    3. Slice salmon into 6 pieces; garnish with lemon wedges and dill sprigs.

    *To crush mustard seeds, place in heavy resealable plastic bag; press with flat side of meat mallet.
